

                                Good Pie Crust

         In 1 heaping cup flour add 2 heaping tablespoons lard, a
         little salt and work together with ends of fingers. Add
         3 tablespoons water or enough to make a soft dough that
         will roll easily. This makes one covered pie, and use
         the same proportions when more pies are to be made. Do
         not bake pies in to hot an oven. More lard may be
         required if not pure country lard.

                                Buttermilk Pie

         Beat together 2 eggs, 1&1/2 cups sugar, butter size of
         an egg and 2&1/2 tablespoons flour. Add 1 cup
         buttermilk, flavor with 1 teaspoon lemon and bake in an
         open crust. This makes one pie.

                                Molasses Pie

         Stir together 1&1/2 cups molasses, 1 cup sweet milk, 1
         tablespoon sugar, 1 tablespoon flour, 2 beaten eggs and
         any flavoring desired. Pour into lined pie tins and bake
         in moderate oven.

                                Maple Cream Pie

         Boil together until thick 2 egg yolks, 1 tablespoon
         flour, 1 pint sweet milk, 5 tablespoons maple syrup and
         a pinch of salt. Cool a little and pour into a baked pie
         shell. Cover with 2 whipped egg whites and brown in a
         quick oven.

                                Vinegar Pie

         Mix tohether 1 cup granulated sugar, 3 or 4 tablespoons
         vinegar, 2 teaspoons lemon extract, 2 level tablespoons
         cornstarch and slowly add 2 cups boiling water, stirring
         constantly on stove until mixture gets thick. When cold
         stir in yolks of 2 eggs and pour into 2 pie tins lined
         with good pastry. When baked, cool and cover with the
         whites of egg and sugar. Brown in a quick oven.

                                Sour Milk Pie

         Take 1 scant cup sugar, 3 large tablespoons flour, work
         together and add 3 cups sour milk in which 1/2 teaspoon
         soda is dissolved. Add 1 beaten egg and nutmeg enough to
         flavor. Line 3 pie tins with rich pastry, put in the
         filling and bake in moderate oven. This is very good.
